Achiote Paste is used in many popular Peruvian dishes, especially to give all types of meat an authentic Peruvian taste.



Achiote paste, a thick, deep-red seasoning also known as recado colorado, originated in the Yucatán region of Mexico. It is a Yucatan-style sauce made from ground annatto seeds. It is best rubbed on chicken, pork, fish, or seafood, to which it imparts a deep-red colour and warm, mild flavour. Dilute with vinegar or olive oil to create a marinade for just about everything.
