Description
Cardamom is a spice that originated in India, Nepal, and Bhutan. It is regarded as the queen of spices and is one of the most expensive spices, ranking third, the first and second being saffron and vanilla, respectively. Green cardamom pods consist of a thin outer shell containing several little seeds. The seeds contain the main flavour, so you can either crush the pods and use the seeds directly, or add the pods whole. Either way, these green cardamoms will add a subtle note to a wide variety of dishes.
Green Cardamom is a popular flavouring agent in Indian sweets such as kheer varieties, in teas and flavoured milk, in rice dishes like biryani and pulavs, and in curries like korma. Cardamom powder is often used to give curries a Mughlai richness.
