This greyish flour with a strong nutty aroma and a very slightly bittersweet after taste, is made of millet, commonly known as bajra in North India and ragi in the south, is mixed with atta for breads. It is also mixed with rice flour to make Puttu (South Indian style steamed rice cake). It is considered to be higher in protein than rice, oats and corn.

How to use Bajra (Pearl Millet) Flour

Mixed with Juwar (sorghum) and wheat flour, it makes hearty flat breads called Bhakri or Rotlo in Gujarati and is a very popular rustic dish from Rajasthani Cuisine. Also, this flour is used on Kumbu Dosai, a south Indian delicacy. Bajra vada, deep fried savoury biscuits, a tea time snack, taste great with a cup of evening tea.
